Born from the same tidal waters that nurture Porthilly oysters, this micro-distillery infuses Rock’s beachy soul into every small-batch spirit it produces. Founder Ed Treverton started by experimenting with foraged sea beet and alexanders, eventually perfecting the flagship Porthilly Sea Salt Gin—a juniper-rich London-dry base lifted by estuary salt crystals and samphire. Today the copper-pot still, nicknamed “Jenny Wren,” hums away in a converted lifeboat shed, turning out Cornish rum, vodka, and seasonal limited editions (try “Camel Tide,” a blackberry & sage gin released each autumn). The distillery shop doubles as a cosy bar serving signature cocktails—Sea Salt Martini, Rock Negroni—alongside local charcuterie and Fee’s Food focaccia. Guided tours (£22) run thrice daily and include a foraging ramble across the foreshore and a tutored tasting in the barrel-store mezzanine. Corporate groups can book bespoke blend-your-own-gin workshops; wedding pop-up bars are available within a 30-mile radius. Sustainability is central: rainwater cooling, solar panels, and bottle-return discounts earn green credentials, while spent botanicals fertilise nearby market gardens. Open year-round Wed–Sun 11 am–9 pm (later in summer). Whether you’re after a take-home tipple or just a sundowner with a sea-spray vibe, Porthilly Spirit Distillery distils the essence of Rock into every glass.
